This sauce is our respectful, chef-driven interpretation of a century-old Louisiana pepper sauce tradition, lovingly passed down in 1997 by an old Cajun friend, Rush Biossat of Maurepas, Louisiana, during an unforgettable evening at the Crescent City Brewhouse on Decatur Street in New Orleans. That moment, steeped in friendship, food, and culture, became the foundation for this timeless sauce.
