This sauce is our bold interpretation of a century-old Louisiana pepper sauce tradition, a recipe generously passed down by an old Cajun friend, Rush Biossat of Maurepas, Louisiana, in 1997 at the Crescent City Brewhouse on Decatur Street in New Orleans. That moment, steeped in Cajun hospitality and culinary heritage, helped shape the foundation of CaJohns. This sauce carries that legacy forward—with significantly more heat.
